1 DOZEN EGGS
1 SMALL JAR SALSA

BROWN SAUSAGE WITH ONION AND BELL PEPPER. DRAIN AND SET ASIDE. SCRAMBLE EGGS. MIX THE EGGS AND SAUSAGE MIXTURE TOGETHER. TO MAKE BURRITOS, TAKE A FLOUR TORTILLA AND SPOON IN SOME OF THE EGG AND SAUSAGE MIX. SPRINKLE SHREDDED CHEESE ON TOP AND ADD THE DESIRED AMOUNT OF SALSA OVER THE INGREDIENTS. ROLL THE TORTILLA LIKE A BURRITO AND ENJOY.

INGREDIENTS

1 POUND OF ORE IDA SHREDDED HASH BROWNS
1 POUND SAUSAGE (ROLL SAUSAGE)
1 SMALL ONION (CHOPPED)
1 POUND OF SHREDDED  CHEDDAR CHEESE
1 DOZEN EGGS

BROWN SAUSAGE AND ONION TOGETHER IN A DUTCH OVEN. REMOVE THE SAUSAGE AND ONION  LEAVING A SMALL AMOUNT OF GREASE IN THE BOTTOM OF THE DUTCH OVEN. BROWN THE HASH BROWNS IN THE LEFT OVER GREASE. ONCE THE HASH BROWNS ARE DONE, LEAVE THEM IN THE BOTTOM OF THE DUTCH OVEN AND ADD THE SAUSAGE AND ONION MIXTURE OVER THE TOP, SPREADING EVENLY. ADD THE CHEESE OVER THE TOP OF THE INGREDIENTS SCRAMBLE THE EGGS IN A BOWL AND POUR OVER THE MIXTURE. COOK IN THE DUTCH OVEN UNTIL THE EGGS ARE SET. SERVES 8

1 SMALL ONION (CHOPPED)

3 CANS OF BEEF BROTH
1 TO 2 CANS CHILI BEANS (OPTIONAL)
CHILI POWDER (2 TABLESPOONS +/- TO TASTE)
GROUND CUMIN (1.5 TABLESPOONS +/- TO TASTE)
BLACK PEPPER TO TASTE

BROWN HAMBURGER MEAT, ONION AND BELL PEPPER TOGETHER IN A DUTCH OVEN OR LARGE POT. DRAIN OFF EXCESS GREASE AND PUT BACK INTO POT. ADD REMAINING INGREDIENTS AND STIR IN WELL. MORE BEEF BROTH OR WATER CAN BE ADDED IF DESIRED. HEAT FOR 20 OR 30 MINUTES OR UNTIL HEATED THROUGH. EAT WITH CRACKERS AND SHREDDED CHEESE. SERVES 6-8 PEOPLE .

1/2 CARROT PER PERSON

1/4 BELL PEPPER PER PERSON (CUT INTO STRIPS) (OPTIONAL)
SEASONINGS (YOUR CHOICE)
1 PIECE OF FOIL PER PERSON (LARGE ENOUGH TO HOLD ALL INGREDIENTS

PEEL AND SLICE POTATO INTO ROUNDS. PLACE IN WATER UNTIL READY TO USE TO PREVENT BROWNING. SCRAPE CARROT AND SLICE INTO ROUNDS. TO ASSEMBLE THE FOIL PACK, PLACE FOIL ON FLAT SURFACE, SHINY SIDE UP (REFLECTS HEAT INWARD). PLACE A FEW SLICES OF THE POTATO IN THE CENTER OF THE FOIL. PLACE THE HAMBURGER PATTI ON TOP OF THE POTATOES. SEASON THE HAMBURGER PATTI WITH YOUR FAVORITE SEASONING. ADD MORE POTATO SLICES, CARROT SLICES, ONION SLICES, AND BELL PEPPER STRIPS. PULL THE SIDES OF THE FOIL UP UNTIL THEY MEET. ROLL THE FOIL DOWN (JUST LIKE FOLDING DOWN A PAPER SACK). ONCE THE FOIL IS ROLLED DOWN, FOLD EACH END SO THAT NO LIQUID ESCAPES. PLACE THE FOIL PACK ONTO HOT COALS FOR 15-20 MINUTES ON EACH SIDE. MULTIPLY EACH INGREDIENT FOR FEEDING MULTIPLE PEOPLE.

2 CANS OF CHERRY PIE FILLING
1 BOX CHOCOLATE CAKE MIX
1.5 STICKS BUTTER

MELT 1 STICK OF BUTTER IN THE BOTTOM OF THE DUTCH OVEN. POUR THE CHERRY PIE FILLING INTO THE DUTCH OVEN, SPREADING EVENLY. POUR THE CHOCOLATE CAKE MIX OVER THE CHERRY PIE FILLING. USING A CLEAN SPOON, SPREAD THE CAKE MIX EVENLY OVER THE PIE FILLING. DO NOT STIR INTO THE PIE FILLING. CUT THE REMAINING 1/2 STICK OF BUTTER INTO 10-12 SLICES AND PLACE EVENLY OVER THE CAKE MIX. PLACE THE LID ON THE DUTCH OVEN AND PLACE A RING OF HOT COALS UNDER THE DUTCH OVEN AND A RING AND A HALF ON TOP OF THE OVEN. COOK FOR APPROXIMATELY 30 MINUTES CHECKING OFTEN TO PREVENT BURNING. GRANULATED SUGAR
OIL FOR FRYING

HEAT ENOUGH OIL IN A POT THAT WILL ALLOW THE BENAIS TO FLOAT. WHILE THE OIL IS HEATING, CUT EACH BISCUIT INTO QUARTERS. FRY THE BISCUITS UNTIL GOLDEN BROWN ON ALL SIDES. REMOVE FORM OIL AND ROLL IN GRANULATED SUGAR. ENJOY. BE SURE TO HAVE ENOUGH ON HAND AS THESE WILL GO QUICK. EACH CAN OF BISCUITS SHOULD FEED 4 TO 6.
