Backpacking Food Ideas

Our troop has each person bring their own food for each meal except supper. The following list contains items that Scouts and Scout leader's from our troop like to bring on backpacking trips.

Breakfast;

Oatmeal
Grits
Pop tarts
Cereal Bars
Granola Bars
Individual Danish

Lunch;

Individual Tuna Fish Kits
Summer Sausage
Cheese Crackers
Peanut Butter Crackers
Ritz Crackers and Can Cheese
Single Serve Pasta (Eaten Cold)

Supper;

Summer Sausage Jambalaya
1 Family Size Box of Zatarains Jambalaya mix for 3-4 people.
1 (1.9-2.0 pound) Summer Sausage
follow the cooking directions on the box of Jambalaya. Add summer sausage cut into small pieces to the Jambalaya mix during the cooking process. This is a favorite supper time meal of our troop on backpacking trips as well as monthly campouts.

Tortilla Chicken and Dumplings
1 package of 20 flour tortillas per 5 people
2 cans of pre-cooked chicken (found on the can meat isle of the grocery store) per 5 people
1 bottle of chicken bunion cubes or granules. This is used to give the water a chicken broth flavor. You have to be the judge of how much you want to put into the water. I often put about 3/4 of a jar of granules into the water to give it a rich broth flavor.
bring about 1 gallon of water to a boil in a large pot. Cut tortillas into dumpling size strips and drop into boiling chicken flavored water, add the can chicken and allow to cook until tortillas begin to puff. NOTE: Tortillas will not rise much in size, but they do begin to take on a thin dumpling look.

Beefy Macaroni and Cheese
1 box of Macaroni and Cheese per 6 people
1 bottle dried beef per 6-8 people
1 bottle squeezable butter
Prepare macaroni and cheese according to directions using the squeezable butter to make the macaroni and cheese creamy. Cut the dried beef into strips and mix into the macaroni and cheese and serve warm. Rolls would be a great addition to this meal.

This is only a sample of the food items that are available to backpackers. Taking notice of items in the grocery store during your regular family shopping trip is a good way to pick up ideas to add to this list.
